PEANUT BUTTER MARBLES

Mix together

1 cup shreddded coconut

1/4 cup peanut butter

1 tsp. vanilla

Take up mixture by tsp. and mold into small balls. Chill in fridge. until very firm.

For variety you can use toasted coconut or you can roll the mixture around a maraschino cherry. The latter can be rolled in melted semi-sweet chocolate, if desired.

2 egg whites at room temperature

1 cup finely chopped nuts

3/4 cup granulated sugar

Beat egg whites until very stiff. Beat in sugar. Divide mixture into two bowls. Add the nuts to one bowl. Put 1 tsp. plain meringue on cookie sheet and top with tsp. of the nut mixture. Bake in a very slow oven. 275 deg. until golden brown, about 20 to 30 minutes. (watch baking closely) Any finely chopped nut can be used.

Cream:

1/3 cup peanut butter

3 tbsp. butter

Add 1 cup sifted icing sugar

Add 3 handfuls rice krispies.

Form into small balls and roll into this chocolate mixture.

Melt 3 squares semi-sweet chocolate & 1 tsp. paraffin over boiling water. Dip balls into chocolate and set on wax paper to dry. Cool in fridge.

1 cup butter

1 cup white sugar

2 cup sifted flour

1 egg yolk plus the (white)see below

1 tsp. cinnamon

Mix together and spread in greased tin, about 8 x 11.

Beat egg white with a little sugar. Brush over base and sprinkle lightly with slivered almonds.

Bake at 375 deg. until golden brown. Cut while warm.

These are also called Dream Bars

1 cup flour

1/4 cup butter

small dessertspoon sugar.

Mix above ingredients and press into greased 8 x 8″ pan. Bake first at 350 deg. oven for about 15 minutes.

TOP

2 eggs

1 cup brown sugar

1 tbsp. flour

1 tsp. baking powder

1 cup walnuts

1/2 cup medium coconut

Mix all together and spread over base. Return to oven and bake @ 350 deg. for 15-20 minutes until bubbling and set.

You can dust icing sugar over the top before you serve.
